Anurakti's Cranberry Chutney
GF & Vegan INGREDIENTS 1 tablespoon coconut oil
3/4 teaspoon mustard seeds
1/2 teaspoon fennel seeds
1/2 tablespoon freshly grated ginger
1 cup apple cider
1/2 cup raisons
2 clementines zested and juiced
1 1/2 cup cranberries
1 star anise PREPARATION Heat the oil and add the mustard seeds and wait until the mustard seeds begin to crackle. Add in the ginger and stir well.
Add in the cider and the raisons and the clementine zest and cook for 5 minutes, until the mixture has thickened.
Add in the clementine juice and the cranberries and the star anise.
Cook for about 5 minutes, just until the cranberries begin to pop.
Turn off the heat and enjoy
